Tablescape presents a repast that celebrates family and the season of renewal
SINGAPORE – Easter may not hold a similar meaning to all, but the idea of holding your family close, of celebrating one another, with one another over a delicious spread of food, laughter and joy is universal. Dishes include items such as the Assorted Cold Cuts and Cheeses, added here in a nod to European farming traditions when various pork products finish curing around Easter. For Catholics especially, having given up meat for Lent, being able to dine on “fresh” charcuterie feels like a real reward!
Another traditional Easter item is the Puffy Pastry, inspired by Pizza Rustica which is also commonly known as the Easter Pie – a traditional savoury pastry usually made at home by Italian mamas to celebrate the holy day. Stuffed almost to overflowing with cheeses and meats, Tablescape adds a touch of luxe by including black truffle – its earthy aroma a perfect pairing for the umami flavours.
Other items such as the Seafood Salad that abound with octopus, squid, clams, mussels tossed with celery and black olives in a lemon dressing; and the Beef and Veal Meatballs in Tomato Sauce are sure to be crowd-pleasers – and especially satisfying for hearty appetites.
Then there is, of course, lamb. Lamb is a profoundly important metaphor in the Christian tradition, one of the reasons that it has become a customary protein for Easter meals. At Tablescape’s Easter set, this tradition is alive and well: dine on a glorious New Zealand Roasted Lamb Leg, prepared bone-in with rosemary and garlic.
More protein is available on the table with a fresh Oven Baked Line Caught Fish, cooked acqua pazza style with cherry tomatoes, black olives, basil and white wine as well as a Pork Belly Roulade, served with roast potatoes and grilled vegetables.
